I started cooking in my late thirties. Even though my mum and mum-in-law were both fantastic cooks, learning to cook from them was frustrating for me. As experienced cooks and kitchen veterans, they depended a lot on their senses for measurements. They told me, “You have to “see” or “hear” the cooking”. I was baffled by their methods!

Then I met Uncle Belu. He totally demystified Indian cooking. Finally, here came someone who used measurements and even short cuts!

Under Uncle Belu’s guidance, I could not only cook, but also cook really well! Pork Masala is one of the precious recipes that he has passed on to me.

Although he is no longer with us, he is fondly remembered and very much missed whenever I cook any of the dishes that he has taught me. It is very essential and vital to record these recipes and stories down, not just to preserve the flavours of the food, but also the memories of our cooking histories.
