Durian Apom Balik

This is something traditional and it has its roots in my family. The name of the dish itself is self-explanatory – balik simply means “to go back” and this dish involves folding the pancake back!

Ingredients

  • 90g sugar

    1 egg

    ¼ & 1/8 tsp baking powder (double action)

    100g plain flour

    170g thick coconut milk

    1/8 tsp salt

    80g durian flesh

    Extra fresh durian flesh as filling

Methods

    1. Mix all the ingredients evenly and set aside for at least 15 mins.
    2. Heat up a round pan. Grease the surface lightly with oil.
    3. Pour a spoonful of the batter onto pan and cook on both sides.
    4. When the pancakes are cool, spoon some durian flesh on pancake.
    5. Fold and serve.
