Mee Siam Goreng

This family recipe is handed down from my mother, which is one of my favorite ‘mee-goreng’ recipes. I have grown up eating this wonderful mee-siam goreng, and has made it a staple for all my get-together & family events.

Ingredients

  • Mee Siam Paste (Blend) :

    2 big red onions

    6 cloves garlic

    10 dried chillies, soaked in hot water for 20 mins

    100g dried shrimps, soaked in water for 20 mins

    1 cup water or as needed

     

  • Mee Siam Goreng:

    1 packet dried bee hoon, soaked in water for 1 hour (400g)

    300g medium-size prawns

    2 pcs fish cakes, thinly sliced

    4 tbsp taucho (fermented soya beans)

    2 tbsp tomato puree

    2 pcs taukwa, cut in small cubes and fry till crispy

    5-8 stalks chives, sprinkle onto mee siam goreng

    2 hard-boiled eggs

    Salt and sugar to taste

    Cooking oil

Methods

    1. Heat oil in wok.
    2. Add blended ingredients and stir for 15 mins.
    3. Add taucho and tomato puree and stir for 5 mins.
    4. Add prawns and fish cakes and stir-fry for about 2 to 8 mins.
    5. Add salt and sugar to taste.
    6. Add bee hoon and stir-fry well for 10 mins. Add water as needed
    7. Add crispy fried tauhu and stir-fry for 5 mins.
    8. Sprinkle chives and add hard-boiled eggs on top.
    9. Serve.
